Sesame cookie

Have been wanting to try this for awhile now and found the best timing for Chinese New Year. Found this recipe in food4tots on sesame crisps. I made it a little thicker as cookies.

Makes about 36 pieces

Ingredients

25g egg white, room temperature
20g castor sugar
30g plain flour, sieve twice
20g unsalted butter, melted
90g toasted white sesame seeds

Note: I used 45g white sesame seeds and 45g black sesame seeds or leave the black sesame seeds

Directions

1. Fry (without oil) white sesame seeds in a non stick pan over a medium-low heat until fragrant. I tried frying black sesame seeds together but it turned out to be a little bitter. So, just fry white sesame seeds.

2. Preheat oven at 170°C and line parchment paper on baking tray.

3. Using a medium bowl, whisk egg white (with hand whisk)  until foamy. Add in sugar and continue whisking until sugar dissolves.

4. Stir in melted butter and mix well.

5. Add in flour (all at once) and mix till no traces of flour or no lumps.

6. Fold in toasted sesame seeds with a spatula until mixture is well combined. The mixture should be dry and sticky.

7. Spoon about 1/2 tablespoon of mixture on baking tray and spread out into a round shape using a fork. If you like a thin crisp, spread out the mixture to 1 sesame thick. If you like a thicker cookie (like I did), it’s about 2 sesame thick.

8. Bake for about 8-10 minutes or until golden brown and crispy. Rotate the baking tray towards the last 2-3 minutes.

9. Remove from oven and let cool. Store them into air tight container.

Mini pumpkin cheesecake

Recently tried this for dessert during Chinese New Year, not too heavy with cheese taste and a little spice to the good old plain cheesecake. It’s good with white or red wine, if you’re a wine lover.

I adapted this recipe from eats well with others and made it less sweet for our taste.

Makes about 15 cupcakes

Ingredients

220g Digestive biscuits, crushed
113g unsalted butter, soften
1 tbsp cinnamon powder
250g cream cheese, room temperature
114g sugar
3 large eggs
1 tsp vanilla essence
385g pumpkin, steamed and mashed
1 1/2 tsp pumpkin pie spice

Directions

1. Cut pumpkin into slices and steam for about 20 minutes. Once done, remove the pumpkin skin. Cut pumpkin into smaller pieces and put in a medium bowl to mash. Then, leave to cool.

2. Pre-heat oven to 180°C. Prepare paper cups.

3. In a large bowl, stir together Digestive biscuits, butter and cinnamon powder. Spread out evenly in 15 paper cups. It gives you about 5-10cm thick of crust.

4. In the stand mixer bowl fitted with paddle attachment, beat cream cheese on medium-high speed for about 1 minute until light and fluffy. Add in sugar and beat for another 2-3 minutes.

5. Mix in eggs, one at a time and scraping down the bowl after each addition.

6. Mix in vanilla essence, pumpkin and pumpkin spice. Scoop the filling into the paper cups. Hit the tray with cupcakes on the table lightly for any air bubble to lift.

7. Bake for about 30-40 minutes. Turn off the oven and let the oven door slightly ajar for another 30-40 minutes.

8. Remove from oven and let cool. Allow to chill in refrigerator before serving.

Note: If you would like to have a smooth cake side, you may either use warm spatula to smooth it or bake it in a mini baking ring with foil covered at the bottom.

Kettle / Pot cleaner ポット洗浄

When your kettle starts to build stains at the bottom or the wall of the inner pot, you’ll think about getting a new kettle or pot. Before you do that, try this! I recommend this pot cleaner. It works wonders!

Choose one that says 除菌 (kills bacteria) and 植物系 (plant type) which I personally prefer for safe and effective cleaning.

This is how my kettle looks before and after the cleaning. Amazing, right? This saves you loads of money from buying a new kettle!

This whole pack is written in Japanese but you can find other packs that may be written in Chinese. Here is my version of English translation instructions for this pack.

1) Put in hot water about 40 degree celcius into the pot up to the maximum line.

2) Put in one pack of the cleaning powder and leave it soak for about 30-40 minutes. Note: While cleaning, please notify everyone or put a note on the pot so that nobody will drink the water.

3) Once time is up, pour away the water and wash the pot under running water until clean.

Please read instructions properly before using as different brands has different methods of cleaning.

Korean mini rice cooker 韩版 迷你电饭煲

I would like to recommend this as I find it very suitable for people who stays alone and would love to cook but usually for 1-2 person. A small portable mini rice cooker!

The whole box comes with a mini cooker, a power cable, a stainless steel tray, a measuring cup and a spatula.

I love this cooker of its non stick inner pot which is easy to clean.

Both the inner pot and the shell is joint which makes me worry that water will get into the cooker through the power socket but I worry too soon. The power socket is designed with a silicon cover which prevents water to get in. However, you must also be cautious to close the cover properly and as it cautions you, “don’t put it in water”. After a few usage, it’s still working fine!

The cooker is simple to use as it has only 2 buttons, either “Cook” (the red light will light up) or “Slow Cook Keep Warm” (the green light will light up). It was introduced that the cooker can keep warm for about 4 hours with attaching to the power. This, I have not tried as I prefer to eat my food right after its cooked.

When you cook something, caution that there will be a lot of steam coming out from a hole on the top cover. The amount of steam will depend on what you are cooking. You may want to put a cloth below the cooker if there is too much steam as the steam turns to water pretty fast.

The box does not provide any recipes but the promoter recommended these simple recipes. Note: 1 cup serving is using the measuring cup provided in the box.

White rice : 1 cup with 1 1/2 cups water

Brown rice : 1 cup with 2 cups water

Porridge : 1 cup with 7-8 cups water

Spaghetti : Boil half a pot water, then put in spaghetti and cover for about 5 minutes

Steamed egg : 1 egg with 1 cup water (using stainless steel tray provided, put at the top of the inner pot after the rice has been cooked for about 7-8 minutes)

Please note that the above are just suggested methods. I tried with brown rice but as the type of brown rice that I use is different from their demo, I think I may have put a little too much water if I follow their suggestions. You will still need to try it with your own ingredients to get the taste and texture that you prefer.
